Sometimes we find ourselves stuck. We sometimes become aware something in our life isn't right, for a multitude of reasons. You're in trouble, things are coming down around our heads...theatening us, our family or being...
Don't be afraid to reach out. You won't fall.
Have faith and know it's the object of your faith that calms our fears. Place the weight of your fear on God...your Source. When someone puts out a hand, don't question or be too proud to accept the help. One day you will turn and put out a hand to another.
It's ok to be broken...it's how we put ourselves back together that matters. Usually, we are better off doing all we can, but also accepting the help of others and our faith. Staying in a state of Grace to give AND receive will open doors that you might see as closed. If not for others (help) that Source(God) has sent your way, you are closing the door to abundance. Don't be afraid when those bridges burn behind you...by all means, thank the Universe for making it impossible to return to that which gave you pain, denied you of self respect, your ability to create a life full of all things good and abundant. Alignment with your Source sometimes reqires you accept that which is offered to you from those people or resources that has been sent to you...
Pride will be of no service to you, you are not that strong standing alone. Stand in the faith that the Universe is standing with you.
We don't and won't let others walk through the darkness alone. Let the Source shine its light upon you and light your way...Deborah

One thing about diabetes that's not common knowledge!
There are several reasons why blood glucose levels can become erratic and rise to levels that may cause you to have some symptoms that may seem uncontrollable.
Any Inflammatory condition, from various causes, can play havoc with your blood glucose levels, for reasons you can't predict. You can be doing everything right by taking the proper amount of insulin and one hour later suddenly feel very ill...you test your blood glucose and it's well over the mg/dL you corrected a short time ago. So, if you are diabetic and are suffering from any inflammatory condition, check your glucose levels should you suddenly feel "odd" ,feel dizzy, diaphoretitic and about to hit the floor!
It is not like taking steroids and your glucose levels rise...this is sudden and one hour ago your levels were well under control, but in this case, these symptoms appear to come out of nowhere, for no apparent reason....except the inflammation. Please contact 911 and have them get you directly to the nearest emergency room. Don't try to guess your way out of this one people! You could be thinking you're hypoglycemic by taking too much insulin...but this may not be so. Allow the doctors figure this out. Thank you!

Be aware of the symptoms of high blood sugar levels, which include increased thirst, fatigue, hunger and frequent urination -- all symptoms associated with the body's efforts to expel excess blood glucose.
People with diabetes should check their blood sugar levels before and after exercising, and checks during exercise are recommended during lengthy periods of physical activity. Blood sugar tests are also recommended before meals and after several hours without food. In some cases, doctors may advise their parents to check their blood sugar levels after meals as well. What is CoQ10?
What's all the hype about CoQ10?
This coenzyme is required in every living cell in the body. Its chemical name is Ubiquinol, because it’s ubiquitous. This is an electron rich (reduced) coenzyme naturally occurring in all cells and becomes less abundant as we age, experience stress, illness or if we consume certain medications. The brain, liver, kidneys, pancreas and other organs that require high energy to function at optimal levels require extremely high concentrations of CoQ10. Why? CoQ10 provides energy for the cells. CoQ10 exists in three redox states: Ubiquinone, which is the fully oxidized state, semiubiquinone and ubiquinol ( the fully reduced state). When a substance is oxidized it undergoes a loss of an electron(s). When it’s reduced, the substance gains an electron(s).
These are called redox reactions. In this case, cellular energy is produced when two electrons are exchanged in a redox cycle between ubiquinol and ubiquinone. This reaction also provides antioxidant protection to the cell. The mitochondria in cells are full of this coenzyme and thereby produces a powerhouse of energy and protection.

Avocado heaven!!
It’s a rather bland fruit…but oh, what you can do with this fruit that will make you want to eat them at every meal…
Some suggestions: 1. Eat plain 2. Add fresh lemon or lime juice. If the fruit sits for a time , this will keep it from turning dark. 3. Add freshly made dressing. You can add herbs such as mint, tarragon, rosemary, garlic, onion, dill…you get the idea? 4. Add honey mustard to above or just add the mustard alone. 5. STAY AWAY FROM BOTTLED DRESSING! 6. Mash it 7. Use the mash to make guacamole, season to taste with fresh ingredients. Eat as dip or add to a salad. 8. Melt cheese and herbs etc. over the fruit. 9. Add other seasoned veggies raw or sautéed…combinations are limitless. 10. Add tuna, chicken salads, cheese optional 11. Add slices or spread it on toast with seasonings, fresh! Cheese optional, tomato, turkey bacon heat …have this for BREAKFAST, LUNCH or DINNER ! 12. Put it in a blender, add Tofu with veggies and or fruit. 13. Use the Avocados to thicken soups!
Do you get the idea? You can even garnish a plate with it, but eat them (always check with your doctor if you have dietary restrictions).

Such joy in fresh foods! How do I store them?
Culinary must knows when storing fresh food...
What don't I freeze? Coffee, anything in a can (unless it came that way like juice), eggs and fresh herbs. However, you can put fresh herbs in oil,in ice trays...stick in freezer. Fresh pesto can be made in late summer and stored for the winter, if you COVER it with extra virgin olive oil! Soooo good all through the cold months!
Is this lemon, lime or oranges still eatable?
A dark patch not penetrating the fruit...it's ok. It's called tree rub. When lemons hang in groups on a tree, they can bruise. It's called limb rub. If thrE is a little dark spot...
and it is penetrating the fruit, in the trash bin it goes.
Lemons, limes or oranges that have been zested...wrap in a damp paper towel. Store in fridge or store in freezer bag and store for weeks in freezer.
Garlic? Stored garlic in fridge or on counter in cool dry place...will last days to weeks, but if they sprout, just cut the spouting area out because it's bitter or plant it. In the freezer they can last months. It's best if the cloves are separated.
Fresh ginger root...cut it in slices and store in freezer...enjoy for months. Keeping fresh ginger in the pantry, it will only last two to three days. If the ginger has mold that's penetrated the flesh...in the bin it goes.
Olives...there are two kinds of white spots. One is fat and will disappear at room temperature. It the spots don't disappear, it's mold so in the bin it goes.
Eggs...sink or float? Sinking eggs are generally good. Floaters go in the bin.
You need to depend on your Nose Always!
When there's just a little left, use it! Cheese rinds, sour cream, butter milk left overs...and more!
Put them in soups, top a pizza, use in smoothies!
Sour cream, cottage cheese, butter milk, bites of cheeses or cheese rinds...if it passes the nose test...use them, BEFORE the last goes bad.

lemons 🌝
Lemons are used for all reasons from culinary to medicinal (I make no claims), but I feel better
if I get a daily lemon diluted with water and some Truvia ( I put a small dash of Cyanne pepper in it too). I even grow my own...year round. It gives me energy and I generally feel much better I when I drink it in the morning ..I notice if I dont drink the lemon juice , I don't have as much pep.
I'm sure my trees want to be put outside by now! As always check with you doctor before adding anything to your diet that you have never eaten or not eaten in a larger quantity than usual. Enjoy!

Yes, it's pi day! However, this one you can eat...
To make this health treat...
Use one pie crust (or cookie dough, but that not low anything) roll it out and bake as directed. Don't forget to dock it or it will bubble on you.
Top with well drained Greek yogurt in the flavor of you choice. I like to use plain Greek yogurt and I put in fresh berries that I have cooked down and sweetened with Stevia. Mash the berries and put them in the yogurt. Mix well.
Use fresh fruit to cover the top...make some great arrangement with the fruits of you choice.
Melt jelly ( in the flavor of your choice) or use a gelatin to top your fruit pizza! It's great snacking or dessert.

GOODBYE WINTER!
Goodbye winter ...
This meal just hits the spot. I serve various versions of it and nothing is hard about creating it. Start with sausages, chicken or turkey is great and preferably spicy...Suggested amounts to serve two, with some left over.1/2 green pepper, 1cup baby carrots, 1/2 sweet onion sliced in 1 inch strips, 1 cup of mushrooms, 3 or 4 whole garlic cloves, 1 fresh juice of a lime, 5 fresh mint leaves, 4 to 6 sprigs of fresh thyme, 1 and1/2 cups small tomatoes , 1/2 cup celery, 4 large sausages that have been opened and formed into small egg shaped pieces. Make quantity variations of the each element as needed.Remove the sausage from the casing (please don't use preformed patties, unless they are really high quality).All portions of meat and vegetables are gaged according to how much you need to serve. I generally make a little more than called for per person.In a large pan, cook the sausage. Remove the sausage when fully cooked (put to the side) leave the rendered fat, add your favorite wine, preferably a little on the sweeter side. Add enough to deglaze your pan ... This will pick up all those little pieces of meat and fat in the pan. Add carrots , green peppers, celery,fresh thyme (use a generous amount), garlic(we want plenty, but certainly to taste) , the juice of 1/2 to 1 fresh lime , add the tomato purée. You will use enough to coat the vegetables, add a wedge rind of Parmesan cheese (let sit covered by the sauce). Plan to have approximately 1.5 to 2 quarts left (you will need it later), add the meat back to the veggies and sauce, stir from time to time. Add small tomatoes last and add a pich of salt to them.On medium heat, start the cooking process for the sauce veggies and meat. At this point I add about a teaspoon or tablespoon of coconut oil ( use the amount appropriate to the portion size of the dish).Cook the veggies to the point where they are half done...no mushy veggies, plz!Stir and let simmer. In a separate pan, gently sauté the mushrooms and onion in a generous amount of butter....don't crowd the mushrooms!When they are fragrant to the point of bliss, add them to the simmering veggies and meat.By now, the mixture should be amazing! At this point, you will add a small amount of fresh mint...don't overdo, as the mint aroma and flavor will develop over time.Continue to simmer until every ingredient is integrated.This dish has great flavors and it's bright...wow!Serve with brown rice or wild rice*.ENJOY!*The rice: Cook as directed. To the rice add a few tablespoons of the sauce and incorporate some of the fresh thyme. Again, don't overdo the herbs. NOW ABOUT THE REMAINING PURÉE :In a slow cooker, add remaining purée. This will be used to make a variation of a marinara sauce.To the remaining purée :Add approximately 1 tablespoon of dried Italian seasoning.a small amount of sugar or Stevia (no other sugar substitute will do) to taste.Add one Parmesan cheese rind,1 onion and 2 cloves of fresh garlic sautéed in butter. You want them caramelized and sweet, they can turn bitter if over done. If desired, add 1/4 cup Marcella or sweet Sherry wine. Add to to sauce. At this point, add a pinch of sugar if needed and salt and pepper to taste.Slow cook on med. heat until the sauce starts to boil. Then turn to low heat.In about 1 and 1/2 hours, it should be ready to cool and refrigerate. You will know when it's done. All the ingredients should be well blended.Any leftovers from the sausage and veggie dish can be added and served with your favorite pasta. Keep the paste simple and don't overcook the pasta!

The BATTLE with Lyme Disease...
Spring, summer and fall ….ticks. Learn to take the proper precautions to prevent being infected by this disease called Lyme borreliosis, otherwise known as Lyme diease. Some signs that you have been bitten is an expanding area of redness. This is known as erythema migrans…the”bullseye” rash. However, about 25% of those bitten never see this rash. You must catch this early stage of Lyme diseae as soon as possible, if you were infected by the bite.There is a treatment for those in the early stage of the this disease. People feel flu-like, tired and generally have a headache. If this persists a little too long for the flu.left untreated, people develop numbness, an inability to move facial muscles, joint pains, severe headache, stiffness, heart palpitations and joint swelling. After time, some 10 to 20% develop a worsening of symptoms and suffer from severe weakness along with decreased cognitive skills. Loss of writing skills, conversational ease and memory issues top the list of symptoms . After this it’s a chronic illness and you MAY, in some cases, not recover. The infected ticks bite you or your pet then you or your pet present with the above symptoms. So, protect your pets by proper preventative medication…check yourself and your pets regularly, especially if you live in certain areas of the country. When outdoors in grassy or wooded areas keep covered. Each year over 300,000 people become infected. Over 40,000 will not have a clue, until they have symptoms. If you have any question that you may be infected SEE AN INFECTIOUS DISEASE SPECIALIST. Insist that the doctor runs a WESTERN BLOT and not an ELISA test. The ELISA test is FALSE NEGATIVE over 40% of the time. Whilst the WESTERN BLOT confirms the disease with astounding accuracy. This IS a time to be insistent, it’s your life, not a popularity contest. Fight it now or fight for your life latter. Later, at this stage of the illness (chronic neurological Lyme disease) there is no cure and it becomes quite aggressive , but increased awarenes on your behalf and researchers efforts will bring useful knowledge forward. Promote AWARENESS about Lyme Disease… People are commonly told they have fibromyalgia as well as many other persistent conditions. If you are ill and can’t get a firm diagnosis, TELL your doctor you want at WESTERN BLOT, don’t settle for the ELISA test, generally used to scan for Lyme Disease. This test has over 40% false negative results. Only a Western Blot will show the bands that indicate the presents of LD. There are too many people walking around feeling deathly illl and can’t get a diagnosis. Well, maybe you are one of those people. 💜

Using Grape Seed Oil for Culinary Purposes

properties: in 1 Tablespoon, 13.6g Smoke point 421 degrees F (216 degrees C) Omega 3 fatty acid, alpha linoleic 0.1% Omega 6 fatty acid, 69.6% Oleic acid. 15.8%This oil is wonderful to cook at higher temperatures. It's quite clear and has almost no taste, but does impart a slightly "nutty" flavor. Grape Seed Oil is priced reasonably and has a wide range of culinary uses. Often, it's extracted from wine grapes. It is best kept cool and in a dark place. If you don't use much, it's best kept refrigerated. It is not a good oil , in my opinion, to be used in cold dishes, as it's a little too heavy, for my taste. However, apply heat and it's very versatile.Grape Seed Oil is a strong antioxidant packed with vitamins and minerals, most of which have anti-inflammatory properties. I WILL NOT MAKE ANY STATEMENT REGARDING MEDICINAL PROPERTIES, but as an anti-oxidant, anti inflammatory it does seem to help people keep there food better suited to their needs. Benefits:Contains high amounts of Vitamins( particularly E and C)and minerals.Remember vitamin C is not heat stable.It has been seen to increase HDL and lower LDL levels. This is a good choice if you have coronary artery disease or hypertension. Always speak to your physician about such things!Diabetics may benefit from the polyunsaturated linoleic fatty acid.This oil has been shown to improve the structural integrity of veins and capillaries and reduce "spider" veins.People with arthritis, including rheumatoid arthritis seem to benefit also.Basic inflammatory properties appear to help with stomach issues, swelling and wound healing (talk to your doctor if the wound is open, as this is not sterile).SIDE EFFECTS: Dizziness, elevated blood pressure, headache, nausea and indigestion.Allergies to grapes.Do not use if you are taking blood pressure medication or anti coagulants, such as Warfarin. All things considered it's a good choice for frying, greasing pans and other high heat recipes. There are other oil choices and we will discuss them in other blogs. Thank you!

Fresh lemon juice, diluted with a little water, raw sugar and cayenne pepper…it’s a great start to your day or anytime you need a boost. It’s a great way to get some vitamin C, decrease inflammation and aid circulation. Nothing is a miracle solution to anything, but it really makes a difference for me. If you have digestive issues be careful and don’t overdo.#feelbetter
Protein can be obtained from a number of sources. We tend to get all wrapped with antioxidants etc. and forget forms of proteins that we eat with those lovely veggies and fruits… Yes, we all like those juicy steaks, burgers, bacon and roasts, but…explore other sources. Don't derail your diet!
I’ve been blogging a lot on health and nutrition and I’m going to carry that theme on for a while longer.
Realize, it’s winter, so special attention should be paid to hydration with all these freezing and dry conditions, but especially in really extreme cold conditions. There are many ways in which you can become dehydrated in the winter. Of course the cold temperatures affect us, in and out of our homes that are low in humidity ( humidifiers help a lot and your skin will thank you). We tend to consume vast quantities of food and drink alcoholic beverages more in winter. Combine all of this with the water we sweat away while exercising, running around in heavy clothing, fluids depleted from medications…well, you need to find ways to rehydrate more than usual!
Here are some suggestions to replenish your poor dehydrated self…😰
Teas: There are wonderful teas that are NOT caffeinated.
Note: Andrew Lessman’s has exceptional teas that contain caffeine AND those that are decaf. His Egyptian Golden Chamomile and Peppermint teas are amazing. You can also enjoy Green teas infused with Jasmine or Earl Grey Green tea. You can buy many other brands of these teas in many stores, but his are not in paper bags or loose, but rather a special wrapping that holds the pure tea. One bag makes a full pot and the Caffeine-Free teas are naturally decafffinated! HSN carries them and they can also be obtained on his website.

Rose, Lavender and so many flowers and herb teas can be prepared by YOU. You obtain eatable Rose extract, Lavender buds and so much more. Add boiling water, emmm. Various teas can be used for relief from some minor health issues (check with your physician).

Fruit infusions: Oh, how lovely! Mix your favorite fruit or fruits with pure water or coconut water and enjoy! Serve cold or hot. A truly refreshing and cleansing infusion is cucumber,mint and fresh lemon. Whatever you like…it’s usually do able.
Special infusion containers can be found, but I like the fruit and herbs floating free.
If you are board with your teas, try taking an organic green tea ( I highly recommend Andrew Lessman’s teas. One bag will make 6-8 cups) and adding fresh fruits. Freshly squeezed Juice: these are great, but diluted them with water. They are often high in sugar, as is Coconut water.
If you are a tea lover, freeze your favorite flavor teas and choose one and add it to your smoothie!
Then, of course: First, Middle, and Always drink plenty of pure plain WATER. 😉Enjoy!

Cinnamon goes great with savory. So, use it to your advantage. Cinnamon also helps stabilize blood sugar. Even if you take insulin, everything you can do to lower that blood sugar is helpful. If your not diabetic, you still want your sugar level stabilized as much as possible. Obviously, you don’t want it too low, but if reasonable amounts of this spice drop it to that point …see a doctor!
So, wake up your taste buds, choose sugar alternatives that are not lab made chemicals. Even if that sweet flavor comes from Mother Nature’s kitchen, try to ingest them in moderation. Stevia is a good choice to sweeten food, it’s plant based. If you cook pasta, don’t overlook it, acidic acid based foods like pickles are great to eat…they slow the absorption of glucose. You don’t get sugar spikes, feel satisfied longer and your diet is going to work better for you.

Recent studies are being carried out by the ISS are focusing on epigentetics. This would involve the study of how expression of genetic information can be modified without altering the functional DNA sequence. They are using Drosophila and worms. This is of utmost importance in understanding how living organisms are acted upon by those conditions encountered during space travel and understanding how each successive generation might be altered. What's all the fuss about CoQ10?
This coenzyme is required in every living cell in the body. Its chemical name is Ubiquinol, because it’s ubiquitous. This is an electron rich (reduced) coenzyme naturally occurring in all cells and becomes less abundant as we age, experience stress, illness or if we consume certain medications. The brain, liver, kidneys, pancreas and other organs that require high energy to function at optimal levels require extremely high concentrations of CoQ10. Why? CoQ10 provides energy for the cells. CoQ10 exists in three redox states: Ubiquinone, which is the fully oxidized state, semiubiquinone and ubiquinol ( the fully reduced state). When a substance is oxidized it undergoes a loss of an electron(s). When it’s reduced, the substance gains an electron(s).
These are called redox reactions. In this case, cellular energy is produced when two electrons are exchanged in a redox cycle between ubiquinol and ubiquinone. This reaction also provides antioxidant protection to the cell. The mitochondria in cells are full of this coenzyme and thereby produces a powerhouse of energy and protection.

Every 28th of January, NASA marks the remembrance of the Apollo 1, Challenger and Columbia disasters and the mission crews… As well as remembering all those special people who lost their lives working on any NASA project. They died doing what they loved and believed in so very much. We thank their families and acknowledge their tremendous loss..
Let us pause and remember the brave souls who lost their lives in service to their country.🌹🇺🇸
Avocado heaven!!
It’s a rather bland fruit…but oh, what you can do with this fruit that will make you want to eat them at every meal…
Some suggestions:
1. Eat plain
2. Add fresh lemon or lime juice. If the fruit sits for a time , this will keep it from turning dark.
3. Add freshly made dressing. You can add herbs such as mint, tarragon, rosemary, garlic, onion, dill…you get the idea?
4. Add honey mustard to above or just add the mustard alone.
5. STAY AWAY FROM BOTTLED DRESSING!
6. Mash it
7. Use the mash to make guacamole, season to taste with fresh ingredients. Eat as dip or add to a salad.
8. Melt cheese and herbs etc. over the fruit.
9. Add other seasoned veggies raw or sautéed…combinations are limitless.
10. Add tuna, chicken salads, cheese optional
11. Add slices or spread it on toast with seasonings, fresh! Cheese optional, tomato, turkey bacon heat …have this for BREAKFAST, LUNCH or DINNER !
12. Put it in a blender, add Tofu with veggies and or fruit.
Do you get the idea? You can even garnish a plate with it, but eat them (always check with your doctor if you have dietary restrictions).
